I made an awesome one the other day!
I fried up some onions in a little butter, added some leftover chicken and tomatoes, and used that mixture, along with some aged cheddar cheese as the filling. SO GOOD!
I didn't have any red peppers or mushrooms though... that made me sad..

I've never made one but if no one has a recipe I'll try to come up with a good one

Once after thanksgiving I made a thanksgiving leftovers omelette, it was good, but it was one of the densest, heaviest foods I've ever eaten, because it was like omelette/fried mashed potatoes as a base, with turkey and stuffing mixed in there too.

I didn't use any potatoes but I loved the one I made with turkey and cranberry sauce.

To be fair, with the potatoes in there I'd be a little hesitant to even consider an omelette. It was just sort of a half omelette, half potato pancake thanksgiving amalgam
