Trigun is a semi-western action in the future (?), with good comedy. A good one to start for non weaboo fags. Posting our favorites would not be the best recommendations for a newcomer, trust me.

I'm personally not a fan of Trigun but it's widely recommended for newcomers to anime. I would watch more episodes of Cowboy Bebop, you need to watch the first 4-5 before it really starts to pick up and it gets pretty amazing. It also seems to fit the interests you listed (action, sci-fi, western in the sense of bounty hunting, etc).

Adult Swim starting playing Cowboy Bebop again from the beginning last night. Weeknights 1AM EST. It's really the only one I can recommend even though you've seen it because it fits with what you said you like and in my whole life it's one of three animes I've actually liked.

Trigun and Cowboy Bebop are definitely my favorites.
But I'm gonna say Samurai Champloo since they already said those. I haven't finished it, but around a year or so ago I watched about half of it, and it was bitchin'. I would buy the whole thing and start over if I saw a decent price, but I saw it before by getting it at random from somebody on the hub. And had to delete it once to make room for porn.

Monster.
A pretty long but very well thought out murder mystery involving a doctor and his attempting to uncover the truth of a string of murders apparently perpetrated by a person he helped save the life of in a surgery room.

Definitely Trigun. I dislike most anime, but I fucking love Trigun. Make sure you get it subbed, not dubbed, though. The english voice actors suck.

Almost ALL English voice actors for anime are terrible. Even if they aren't, time and animation constraints can lead to some lines being totally changed from what they actually mean. Subtitles are the only way to ensure that neither shitty acting nor poor translations get in the way of your viewing experience.
FUN EXPERIMENT: next time you watch anime on DVD or ogm or mkv, turn on the english subs with the english audio on. See how often they're different.
As for my suggestions, I'd go with Trigun and Cowboy Bebop as well. Samurai Champloo is good, too. My personal favorite anime is FLCL, but I wouldn't recommend it to someone who's new to anime. Unless you don't mind not knowing what the FUCK is going on until the second or third time through.

Fuck subbed. Although you do get used to reading it (and you can't even tell the difference after awhile) it's still annoying at first.
I dunno, like everyone said, Trigun is good (kinda corny though, I loved it), Cowboy Bebop is a classic, Full Metal is decent (although on the weirdo jap side), Hellsing was enjoyable and action packed, Avatar is decent for a american anime... I dunno.

I watch everything with the subtitles on (or captions, if it's on TV), and I watch everything that has an English audio track with that on. It does kind of annoy me how ridiculously different the translations are for anime, but I don't generally prefer either translation. Of course the only ones I have seen besides on the computer are Trigun and Cowboy Bebop, which may be exceptions.
And I didn't think there was a problem with the English audio for Trigun:/

The original voice actors are just SO much better. The voices just fit. The English Vash sounds like a doofus.

Yeah, I watched Trigun the first two times subbed, then at one point I watched it with someone who insisted on the dubs. The parts that had to be rushed, where they had too much to say in not enough time, ruined those scenes. Also, his voice just sucked.

I always hate the sub vs. dub arguments that you Otaku (And I mean that by any Japanese connotation possible) are always starting.
Vash's dub voice is amazing, seeing as how a "doofus" voice is fitting.

Cowboy Bebop is the gold standard for anyone new to anime. Great animation quality, excellent voice casting, and a Western influence. The other action classics follow such as Trigun and then come the fantasy/sci-fi hallmarks like Evangelion and Escaflowne. By the time those are done, most of the pals I knew were hooked. They were receptive to the culturally-sensitive shows after a while, at least to an extent.
For a twist, slip in a bit of New Getter Robo after the Evangelion. Shi-ZAM; you have a mecha fan.

The newer Gundam series might be to your liking (SEED, SEED Destiny, and Gundam 00) although with SEED and Destiny a lot of people found the main characters too whiny. Maybe not Shinji whiny, but still, annoying.
Code GEASS I'd also reccomend, along with .hack//SIGN but they can be a little boring to some.
Fullmetal Alchemist is just all around good. There's only two episodes in the entire series I didn't like.
AirMaster is a great, mindless, action/fanservice packed series that hardly tries to have a plot. There's a chick with jiggly knockers and she beats the shit out of people.
Chobits and Love Hina are nice if you're looking for something Romance-y. I'd never reccomend the dub of Love Hina to anyone, but Chobits had an amazing dub.
Big O is great too. It's sort of like Bebop, James Bond, and Batman all rolled into one.

All Gundam shows suck, with the exception of the series that has the Endless Waltz movie.

That was Gundam Wing, which is generally looked down upon by Gundam fans I believe, but I personally liked it a lot. It's especially good for people new to anime.
Apparently the early Gundam series are amazing, I've never watched them though.

I was never able to get into Gundam Wing, just didn't interest me, but 0083 was amazing.

Stardust Memory was good, and I liked 08th MS Team. Wing is okay is that's your first foray into the world of Gundams and you're thirteen but otherwise no. I actually didn't care too much for the earlier Gundam series that I've watched. Some of the movies were pretty good, though.
God, I've not looked at anime in so long. Cowboy Bebop is easily the best anime ever.
Subtitling versus dubbing is much more than an "Otaku" thing. I wouldn't have wanted to watch El Laberinto De Fauno in English, either.

Yes. That was like the first anime I saw. It was radical. The same guy who showed me that showed me Bastard, which was also bitchin'.
I don't think I've seen more than twelve or so total, though, counting Pokemon and Yugioh etc.

Dude, I've never been that much into anime, but FLCL is the absolute shit. And it's only 6 episodes, so it's not as if you'll have to invest a lot of time into it, really...though it'll make you think about all that you just saw though...

And holy shit. I just watched Elfen Lied, and that show was so freakin' rad. I can't believe nobody recommended it.
It sucks you in immediately by being ridiculously gorey and having a couple of chicks naked all the time, but damn if it wasn't a moving story.
