Easy to make, and tastes great. This is exponentially easier if you have a quesadilla maker, but I figure most people don't have one.
Ingredients:
-Flour tortillas
-Shredded cheddar or Mexican blend cheese
-Chicken (optional)
-Sour cream
-Newman's Own brand pineapple salsa
-Hot sauce
Lay out one flour tortilla, cover generously with shredded cheese, add pre-cooked chicken, throw on a bit more cheese, and top with second tortilla. Any other seasonings or extra ingredients go in now as well. Heat in quesadilla maker/microwave/oven/whatever. While that's happening, get a small microwavable bowl. Put in two tablespoons of sour cream, four of Newman's Own pineapple salsa (I specifically recommend this brand because it's a lot more flavored than generic salsas; it's rather sweet), and a few dashes of a good hot sauce. Mix, and make sure some of the larger pieces of pineapple/pepper/tomato get a bit crushed. Microwave for ~40 seconds until hot. Cut your now-heated quesadilla into six pieces, but keep it in its original circle shape. Spoon the salsa mixture on top of it, leave a little room on the edge to hold it.
There you have it. The salsa mixture also goes fantastic with tortilla chips if you want to avoid the whole quesadilla process.
