Chicken and Swiss is really good and easy. One of my faves and my boyfriend loves it too.
1 package Foster Farms chicken breast tenders
4-6 slices of swiss cheese
1 can Cream of Mushroom soup
1/2 c. milk
1 tbsp butter or butter substitute spray
1 cup croutons
Preheat oven to 350. Take a package chicken breast tenders (I use Foster Farms) and place them in a baking dish. Mix 1 can of cream of mushroom soup with 1/2 cup milk, mix it well. Cover chicken tenders with slices of swiss cheese. Pour soup mixture over chicken and spread to cover evenly. Take 1 cup of croutons and mix with a tablespoon of melted butter. Spread half of croutons over chicken, cover dish with tinfoil and bake for 30 minutes. Remove tin foil and throw remaining croutons over chicken and bake for 10 minutes more. Remove from oven, let stand 5-10 minutes before serving.
Since I try to watch my weight, I usually use the fat free soup, 2% milk, reduced fat swiss cheese and "I Can't Believe It's Not Butter" spray, which has 0 calories and tastes damn good. Whether you do a reduced fat recipe or not, this comes out super good. You really can't mess this up.
