Pasta
Everybody else I asked has been saying that, but I'm not too big a fan of pasta. If it helps at all, she's into Mexican food and I eat anything.

Quesadillas? Sincronizadas?
Never made them before but they don't seem like they'd be hard...at all.

They even make Taco Seasoning packets. Mix that in with the ground beef/chicken on the skillet, and you're set.

Tacos are easy, and the seasoning packets are actually pretty good on the ground beef. You've just gotta cook the beef, add the seasoning, and cut up vegetables pretty much of your discretion and put them on pre-packaged shells.
If you're looking for something more...fancy? I cook a lot, so I can write you up a nice steak recipe. It's easy, it's tasty, and when done right with the right atmosphere it can even be pretty darn romantic. I can even write up a Mexican steak recipe if you want.

I like tomato mozzarella salad. All you need is tomatoes, basil, fresh mozzarella, a little salt, a dab of olive oil and some balsamic vinegar. It's delicious! Here is an appetizing picture, but that's not basil in that recipe. Be sure to use basil.

My mom also makes the best tabouli, but that's kind of complicated if you think about it.

Malibu Chicken is pretty tasty and pretty easy. Just get a chicken breast and butterfly it. Then take a slice of ham and a slice of swiss cheese and put in there. Close it back up and put it in the oven for about 25 minutes at 220c.
Grilled Cheese
Butter up the the outside of each slice of bread. Throw two slices of cheese in the middle. Put a little butter in a frying pan over medium heat and throw the sandwich on.

I cook a lot.
Good pasta sauces take all day.
I'd say make mexican sandwiches. Look them up, I'm lazy. But all you need is some beef (not ground), munstard cheese (sp), mexican rice, brown gravy and torillas. (and those taco spice packets have every spice you need in it)

Pop Tarts!!!
Ok, ok. seriously. Tuna noodle casserole is very easy. Boil pasta until done. Add 1 can tuna, 1 can peas, and 1 can cream of mushroom soup, stir until mixed.

Omelets are awesome. Throw some tomatoes on a frying pan with some oil, fry them on medium for a little bit, pour eggs over them. Then add whatever you want/have. I usually put some dill, cilantro, and shredded cheese but it's pretty much up to you.
