I have learned to not pig out on one day; rather to have a small breakfast and lunch, then spread out the food (and leftovers) for a few days so you don't have serious internal issues. This will have an even bigger impact for me since I have a Gumbo dinner on Wednesday, Dinner on Thursday, another Dinner on Friday, and a Potluck on Saturday.

I usually eat better on Holidays then on I do on a regular basis. Less food around that I actually want to consume.

For those stuffing a turkey, know what you're doing in terms of cooking temperatre and stuff.

For example if you stuff a raw turkey you could either overcook the turkey or under cook the turkey because of the stuffing inside. The best idea is to either not do stuffing at all or make the stuffing separate from the turkey.

Another thing to be careful about stuffing birds is that the raw juices may seep into the stuffing and cause Salmonella if not cooked right.

Just a bit of cooking advice for the holidays for you Americans. wink.gif
